The Professor was a very smart man, whether it was in gang management or in business operations.
Other gangs named their bars with random names or let the bar managers or team leaders decide on the names.
This resulted in the names of bars under one gang being almost entirely different, a mix of everything.
But the Professor was different, all of his bars shared the same name, simply called "Wolf Bar," which was easy to recognize and had a distinctive identity.
This was actually a promotion-worthy process of cultivating brand identity, once a customer got into the habit of drinking at Wolf Bar.
Later, when they had the opportunity to choose, there was a high probability that they would pick Wolf Bar.
They might even affiliate with the Wolf Gang because they identified with the bar's brand!
No one wants to be in the gang-life forever, and the Professor had much grander ambitions; he hoped that the Wolf Gang was just a stage in his life, not perpetual.
