Ryan had just used Avenger's Shield, a powerful ability unlocked when he specialized in the Protection path. Not only did it inflict solid Holy damage to both bosses, but more importantly, it interrupted Goldtooth's spellcasting and firmly secured their aggro. That was key.
Snarlfang, the brawler of the duo, was relatively straightforward. As the simplest of all secondary bosses, he had only a few predictable abilities—none of them truly dangerous. Mortal Strike was the only one worth watching, cutting down healing received by its target.
