Stats:

Physical Power - Strength. 

Physical Stamina – Total Physical exertion limit.

Durability – Damage resistance.

Magical Power –Dictates the power of moves of the 18 different types. (fire punch, dark pulse etc.)

Magical Stamina – Governs magical move usage capacity.

Speed – Physical and reaction speed.

There is a limit to the increment of each stat in a fixed period of time (around a day).

Strength, Magical power (and speed to some extent) increase the power of a move like thunder punch while Strength does not count in moves like Dark Pulse.

Levels=vitality.

Vitality is the normalized development of a Pokémon's most advanced stat — measured by how far that stat has been pushed beyond its personal baseline in the species' natural stat distribution.

In simpler words

Vitality is determined by how far a Pokémon has developed a particular stat beyond its natural personal distribution. It is not raw power — it's refined presence.

Any stat of any given Pokémon will increase vitality at the same speed.

Vitality increases the damage dealt to Pokémon of lower levels and decreases the damage taken from Pokémon of lower levels.

(This is a thing I created in order to make the difference between Pokémon of different levels larger) 

Talent and genetics of a Pokémon can be improved with various means such as items from "better" Pokémon, lifestyle and specialized training. However, doing so is very hard.
