End note :1) Rasgulla (literally "syrup filled ball") is a syrupy dessert popular in the eastern part of South Asia. It is made from ball-shaped dumplings of chhena dough, cooked in light sugar syrup. This is done until the syrup permeates the dumplings.

2) Malai : is a type of clotted cream used in the cuisine of the Indian subcontinent.Malai has about 55% butterfat

3)Ras malai consists of flattened balls of chhena soaked in malai. Milk is boiled and a small amount of lemon juice is added to curdle it. The whey is discarded and the chhena is drained, cooled and kneaded into a dough. The dough is divided into small balls, and the balls are cooked in a sugar-water mix. The balls are then soaked in milk mixed with some or all of saffron, pistachios, rose water, or cardamom.
